Celaya is known as La Puerta de Oro del Bajio meaning The Golden Door of the Low Land. Celaya is a Zalaya word with Basque origins which means flat earth. It was established on October 12, 1570 as the first villa of the low lands, being then called Town of Our Lady of the Immaculate Conception of Zalaya. Later in 1658, it was awarded the title of Very Noble and Loyal City by King Felipe IV.

Celaya is famous for its high quality production of milk based sweets, which include most notably delicious Carmel sauces with a variety of flavors like: vanilla, liquor, toasted, pecan, pine nuts and coconut. Celaya has a population of 418,000 (415,869 Source INEGI-2005) inhabitants which represents 8.36% of the state of Guanajuato’s population, and 0.39% of the population nationwide.
